Ridge Guard Thovayal (Peerkangai Thovayal)


Hello folks, I hope you are all doing good. I can say today is a healthy day for me and my family. Because of the healthy and tasty lunch we had. Very much fed up with the usual sambar, rasam, paruppu, so today we tried a thovayal using ridge guard in simple method. All we need just 10 mins to make. Here I am sharing you the simple and yet tastiest dish. It is easy to give to your kids who don't like veggies and hesitate to eat. So let's start now :)


Ingredients:

  • Ridge Guard - 1
  • Urad dhal - 1 tsp
  • Dry red chilli - 2 nos (As per your spice level)
  • Curry Leaves few
  • Tamarind Small Piece
  • Asafoetida (Hing) - 1/4 tsp
  • Oil - for tempering and seasoning
  • Mustard seeds -  1 tsp
  • Salt as required
Steps to follow:
  • Wash the full Ridge guard, scrap the outer hard ridges (Do not over scrap the outer layer)
  • Cut into small pieces as shown below.
  • Take a frying pan, heat some oil.
  • Add the ingredients urad dhal, red chilli, curry leaves, and Ridge guard respectively.
  • Keep frying the items without adding water (Since Ridge guard is water content vegetable)
  • Add salt and keep frying for a minute. Close the pan to cook faster.
  • Add tamarind and hing.
  • Later drying the water content, keep aside the pan, and let it cool.
  • Grind the mixture before the level of a smooth paste.
  • Heat oil in a pan, add mustard seeds and curry leaves.
  • Add the ground mixture to the pan, give it a good mix. It's done :)
